Title: Fried Rice with Peppery Curry

3tbVegetable oil
2tbOnions, chopped
1tbGarlic, chopped
1/2cGreen beans, chopped
2tbPeppery curry paste, see - recipe
5cCooked long-grain rice
2tbSoy sauce
GARNISH
1tbCilantro leaves, chopepd
1/2cCucumber, sliced
3 Green onions, sliced

Heat oil in a wok over medium-high heat. Add the onion & stir-fry for 3 minutes, then add the garlic & continue to stir-fry for a few minutes, until both are golden. Add the beans & curry paste & stir-fry for 3 minutes. Add the rice & soy sauce & stir-fry until hot through, be careful not to overcook. Serve with the garnishes.
